- 1 shallot, diced
- 2/3 cup sundried tomatoes, finely chopped
- 1 cup halved baby tomatoes
- 3 garlic cloves, minced
- 1 1/2 tsp dried oregano
- 1/4 tsp chili flakes
- 1 cup whole milk
- 1/2 cup vegetable or chicken broth
- 2 cans (398ml/14oz each) butter beans or cannellini beans, drained & rinsed
- 3 cups baby spinach or chopped kale
- 1/4 cup shredded parmesan cheese
- 1 1/4 cups shredded mozzarella cheese
Instructions
- Heat the oil and cook shallot: Heat oil in a large skillet over medium heat. Add shallot, salt, and pepper. Cook until softened, about 3-5 minutes.
- Add tomatoes: Stir in sundried tomatoes and baby tomatoes. Cook for 2-3 minutes.
- Season and add garlic: Add garlic, oregano, chili flakes, salt, and pepper. Cook until fragrant, about 1 minute.
