  • 1 cup whole milk

Instructions

  1. Prepare the Bacon
    Spray your crock pot with nonstick cooking spray for easy cleanup later. Cook the bacon in a skillet until crisp, then chop it into bite-sized pieces and set aside.
  2. Sauté the Vegetables
    In the same skillet, sauté the chopped onion, bell pepper, and minced garlic for about five minutes until softened and fragrant.
  3. Layer the Ingredients
    Start by spreading one-third of the frozen hashbrowns at the bottom of the crock pot. Then, layer on one-third of the cooked bacon, onion, green bell pepper mixture, and shredded cheese. Repeat these layers two more times, finishing with a layer of cheese on top.
  4. Prepare the Egg Mixture
    In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  5. Cook the Casserole
    Slowly pour the egg mixture over the layered ingredients in the crock pot. Cover and cook on low for 8–10 hours, or until the internal temperature reads 160°F (as measured with a thermometer).
  6. Serve and Garnish
    Once done, serve warm with a sprinkle of chopped green onions on top for a fresh pop of color and flavor.
