These Peanut Butter Frozen Yogurt Bars are a delightful and easy-to-make frozen treat that combines the creamy goodness of Greek yogurt with the rich flavor of peanut butter, all coated in a decadent chocolate shell. Perfect for a refreshing snack or dessert!

For the Yogurt Mixture:

  • 1 cup plain Greek yogurt
  • 1/2 cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract

For Topping and Coating:

  • 2 tablespoons roasted and salted peanuts (optional)
  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the Yogurt Base: In a small bowl, mix together the Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract until smooth.
  2. Form the Bars: Scoop half of the yogurt mixture onto a lined baking sheet, press a popsicle stick onto each mound, then top with the remaining yogurt mixture. Flatten slightly with a spatula.
  3. Add Toppings and Freeze: Sprinkle peanuts on each mound and freeze the bars for at least 2 hours until solid.
  4. Coat in Chocolate: Melt the chocolate and coconut oil, dip each frozen bar into the chocolate, then return to the freezer to set.
