For the Yogurt Mixture:
- 1 cup plain Greek yogurt
- 1/2 cup creamy peanut butter
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
For Topping and Coating:
- 2 tablespoons roasted and salted peanuts (optional)
- 1 cup chocolate chips or chopped chocolate (6 oz.)
- 2 tablespoons coconut oil
Instructions
- Prepare the Yogurt Base: In a small bowl, mix together the Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract until smooth.
- Form the Bars: Scoop half of the yogurt mixture onto a lined baking sheet, press a popsicle stick onto each mound, then top with the remaining yogurt mixture. Flatten slightly with a spatula.
- Add Toppings and Freeze: Sprinkle peanuts on each mound and freeze the bars for at least 2 hours until solid.
- Coat in Chocolate: Melt the chocolate and coconut oil, dip each frozen bar into the chocolate, then return to the freezer to set.
- Serve and Enjoy: Thaw slightly before serving for the perfect creamy-chocolatey bite!

- Feel free to mix in 2 tablespoons of mini chocolate chips for extra texture.
