For the Peri Peri Chicken:

  • 2 tsp Sunflower oil
  • 600 g Skinless, boneless Chicken breast, chopped into bite-sized pieces
  • 2 tsp Peri peri seasoning
  • 2 Garlic cloves

For the Rice:

  • 1 Red onion, peeled and chopped
  • 2 Red peppers, deseeded and chopped
  • 800 ml Hot chicken stock
  • 3 tbsp Tomato purée
  • 200 g Long grain rice, rinsed well
  • 200 g Peas, frozen
  • Sea salt and freshly ground black pepper

Instructions

  1. Prepare the Peri Peri Chicken: Heat oil in a large saute pan, add chicken pieces, and brown for 5 minutes.
  2. Add Flavors: Stir in peri peri seasoning, garlic, and onion; cook until onion softens.
  3. Incorporate Rice and Vegetables: Add peppers, stock, tomato purée, rice, salt, and pepper. Cover and simmer for 15 minutes.
  4. Final Touches: Add peas when rice is nearly cooked; continue cooking for 5 more minutes until everything is done.

Notes

  • Adjust spice level by adding more peri peri seasoning for extra heat.
  • For a vegetarian option, substitute chicken with fried halloumi cubes.
