Description

A comforting and creamy Poppy Seed Chicken casserole with a buttery, crispy topping. Perfect for a quick and satisfying family dinner.

Ingredients

Units Scale

Filling

    • 10 oz. cream of chicken condensed soup
    • 1 1/2 cups sour cream
    • 3 cups cooked shredded chicken
    • Salt and pepper, to taste

Topping

    • 2 sleeves Ritz crackers, crushed
    • 2 tablespoons poppy seeds
    • 1/2 cup unsalted butter, melted

For Serving

  • Cooked white rice

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F. Lightly grease a 9×13 casserole dish to prevent sticking.
  2. Mix the Filling: In a large bowl, combine the cream of chicken soup, sour cream, and shredded chicken. Season lightly with salt and pepper to taste. Spread the mixture evenly into the prepared casserole dish.
  3. Bake the Filling: Place the casserole dish into the oven and bake for 20 minutes to heat through.
  4. Prepare the Topping: While the casserole is baking, prepare the topping. In a medium bowl, combine the crushed Ritz crackers and poppy seeds. Stir in the melted butter until the mixture is evenly coated.
  5. Add the Topping: Remove the casserole dish from the oven. Evenly spread the prepared cracker mixture over the top of the chicken filling.
  6. Finish Baking: Return the casserole to the oven and bake for an additional 10 minutes, or until the topping is golden and the casserole is hot and bubbly.
  7. Serve: Serve the casserole hot over cooked white rice.

Notes

  • Nutrition information is only an estimate and does not include salt/pepper or white rice.
  • Chicken: Consider using a rotisserie chicken for convenience, or prep shredded chicken in advance to simplify the process.
  • Filling Adjustments: The soup and sour cream measurements are flexible. Adjust the amounts to your preference, keeping them equal for a creamy texture.
  • Optional Vegetables: Add canned corn, peas, or partially steamed frozen mixed vegetables to the filling for added flavor and nutrients. Increase sour cream and soup for a creamier result.
  • Cracker Crushing Tip: Crush the crackers directly in their sleeves over the mixing bowl or use a plastic bag and a rolling pin for less mess.
