Instructions
- Preheat and Prepare: Preheat your oven to 350°F. Lightly grease a 9×13 casserole dish to prevent sticking.
- Mix the Filling: In a large bowl, combine the cream of chicken soup, sour cream, and shredded chicken. Season lightly with salt and pepper to taste. Spread the mixture evenly into the prepared casserole dish.

- Prepare the Topping: While the casserole is baking, prepare the topping. In a medium bowl, combine the crushed Ritz crackers and poppy seeds. Stir in the melted butter until the mixture is evenly coated.

- Finish Baking: Return the casserole to the oven and bake for an additional 10 minutes, or until the topping is golden and the casserole is hot and bubbly.
- Serve: Serve the casserole hot over cooked white rice.
