- 8 ounces crushed pineapple in juice, undrained
- 1 cup shredded coconut
- 2 large eggs

- 1/2 cup salted butter, room temperature
- 2 cups powdered sugar
Instructions
- Preheat the oven: Heat the oven to 350º Fahrenheit. Spray a 9×13 baking pan with cooking spray.
- Prepare the batter: In the bowl of a stand mixer (or use a hand mixer), combine the melted butter, spice cake mix, crushed pineapple with juice, shredded coconut, and eggs. Beat well until the ingredients are fully blended, scraping the sides of the bowl as needed.
- Add pecans: Stir in the chopped pecans for added texture and flavor.
- Bake the cake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until the center of the cake springs back when touched, or a toothpick inserted into the center comes out clean.
- Cool the cake: Once baked, allow the cake to cool completely in the pan.
- Prepare the frosting: In a mixing bowl, beat the cream cheese, butter, and powdered sugar together until the mixture is well blended and smooth.
