For the Pasta

  • 8 ounces uncooked fettuccine

For the Alfredo Sauce

  • 4 ounces cream cheese, softened
  • 2 tablespoons butter
  • 1 cup heavy whipping cream
  • 2 large cloves garlic, minced
  • 1 cup freshly grated parmesan cheese
  • Salt & pepper to taste


Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  2. Soften the Cream Cheese: Microwave the cream cheese in 20-30 second intervals until it is very soft and easy to incorporate into the sauce.
  3. Prepare the Alfredo Sauce Base: In a skillet over medium heat, add butter, softened cream cheese, heavy cream, and minced garlic. Stir with a spoon or whisk to melt the butter and cream cheese fully into the cream.
  4. Reduce the Sauce: Allow the sauce to gently bubble and reduce for 3-4 minutes, stirring occasionally to prevent sticking, until slightly thickened.
  5. Add Parmesan and Finish the Sauce: Stir in the freshly grated parmesan cheese, letting it melt into the sauce for about 30 seconds. Remove the pan from heat once the cheese is fully incorporated and the sauce is thickened. If the sauce gets too thick, add a splash of hot pasta water before draining the pasta to loosen it.
  6. Toss and Season: Toss the drained fettuccine with the Alfredo sauce until well coated. Season with salt and pepper to taste and serve immediately.

Notes

  • This recipe makes about 1.5 cups of Alfredo sauce, enough to serve 6+ if used as a topping for chicken, fish, or vegetables. When combined with 8 oz. of pasta, it serves 4 people.
  • To make a larger batch, double the recipe to fill a jar for multiple meals.
