For the Skewers:
- 21 wooden skewers
- 2 cups (284 grams / 10 oz) strawberries, halved or quartered
- 21 goldenberries or 2–3 clementines
- 1 small pineapple, cut into bite-sized cubes
- 21 kiwi chunks or 21 (53 grams / 1/3 cup) green grapes
- 42 blueberries
- 21 purple grapes
For the Dip:
- 4 ounces (112 grams) cream cheese, room temperature
- 6 tablespoons (75 grams) powdered sugar or 3 tablespoons (60 grams) honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/16 teaspoon salt
- 1/2 cup (120 ml) cold heavy cream
Instructions
- Make the dip: In a large mixing bowl, beat cream cheese, sweetener, vanilla, and salt until combined. Gradually add heavy cream while mixing. Beat on high until stiff peaks form. Refrigerate until serving.
- Prepare the fruit: Wash, rinse, and dry fruit. Cut as instructed and thread onto skewers in rainbow order. Refrigerate until ready to serve.
- Serve: Arrange skewers on a platter in a fan shape or in a vase. Refrigerate leftovers in an airtight container.
Notes
- To prepare ahead, wash, peel, and chop fruit and refrigerate in airtight containers for up to one day.
- Assemble skewers and rainbow shape the day before serving, covering tightly with plastic wrap.
