Waffles
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp plus 1 tsp baking powder
- 2 tbsp cocoa powder
- 1/2 tsp salt
- 1 3/4 cups buttermilk
- 1/3 cup melted and cooled butter
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 tsp apple cider vinegar
- 2 tbsp red food coloring
Glaze
- 4 oz cream cheese, softened
- 4 tbsp butter, softened
- 1 1/2 cups confectioners sugar
- 1 tsp vanilla extract
- 1/2 cup whole milk
Instructions
- Prepare the Glaze: In a large bowl, whip the softened cream cheese and butter together with a hand mixer until smooth. Carefully beat in the confectioners’ sugar, then add vanilla extract and milk. Beat until the glaze is smooth. Set aside.
- Mix the Dry Ingredients: Whisk together the flour, sugar, baking powder, cocoa powder, and salt in a large bowl. Set aside.
- Combine Wet Ingredients: In a separate medium bowl, beat the buttermilk, melted butter, eggs, vanilla extract, and apple cider vinegar until smooth. Stir in the red food coloring.
- Make the Batter: Pour the wet mixture into the dry ingredients and whisk until smooth and well combined.
- Cook the Waffles: Preheat your waffle iron according to manufacturer instructions. Spray with nonstick spray. Pour about 1 cup of batter onto the waffle grid and close. Cook for approximately 3 minutes or until deep red and crispy on the outside.
- Repeat: Continue with remaining batter, keeping cooked waffles warm if desired.
- Serve: Top each waffle with the cream cheese glaze and, if desired, chopped pecans for added crunch.
Notes
- For a healthier alternative, substitute red beet powder for the red food coloring.
- Ensure the waffle iron is properly preheated for best results.
- The glaze can be prepared ahead and refrigerated, then brought to room temperature before serving.
