Ingredients

Units Scale

Waffles

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp plus 1 tsp baking powder
  • 2 tbsp cocoa powder
  • 1/2 tsp salt
  • 1 3/4 cups buttermilk
  • 1/3 cup melted and cooled butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 2 tbsp red food coloring

Glaze

  • 4 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 1 1/2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Prepare the Glaze: In a large bowl, whip the softened cream cheese and butter together with a hand mixer until smooth. Carefully beat in the confectioners’ sugar, then add vanilla extract and milk. Beat until the glaze is smooth. Set aside.
  2. Mix the Dry Ingredients: Whisk together the flour, sugar, baking powder, cocoa powder, and salt in a large bowl. Set aside.
  3. Combine Wet Ingredients: In a separate medium bowl, beat the buttermilk, melted butter, eggs, vanilla extract, and apple cider vinegar until smooth. Stir in the red food coloring.
  4. Make the Batter: Pour the wet mixture into the dry ingredients and whisk until smooth and well combined.
  5. Cook the Waffles: Preheat your waffle iron according to manufacturer instructions. Spray with nonstick spray. Pour about 1 cup of batter onto the waffle grid and close. Cook for approximately 3 minutes or until deep red and crispy on the outside.
  6. Repeat: Continue with remaining batter, keeping cooked waffles warm if desired.
  7. Serve: Top each waffle with the cream cheese glaze and, if desired, chopped pecans for added crunch.

Notes

  • For a healthier alternative, substitute red beet powder for the red food coloring.
  • Ensure the waffle iron is properly preheated for best results.
  • The glaze can be prepared ahead and refrigerated, then brought to room temperature before serving.
