Description

Bright and colorful Red, White, and Blue Firecracker Popsicles, a delightful frozen treat made with fresh strawberries, blueberries, and low-fat yogurt. Perfect for summer or a festive celebration!

Fruits

    • 1/2 pound strawberries, hulled and quartered (about 1 1/2 cups)
    • 1/2 pound blueberries (about 1 1/2 cups)

Sweetener

    • 1/4 cup sugar, divided

Base

  • 1 1/4 cups low-fat plain yogurt

Instructions

  1. Prepare strawberries: In a food processor fitted with the metal blade, puree strawberries with 1 tablespoon of sugar. Transfer the puree to a small bowl and set aside.
  2. Prepare blueberries: In the same processor, puree the blueberries with another 1 tablespoon of sugar; set aside the mixture.
  3. Mix the yogurt: In another small bowl, whisk together the yogurt and 2 tablespoons of sugar until smooth and combined.
  4. Layer the mixtures: Pour the strawberry, blueberry, and yogurt mixtures alternately into popsicle molds, creating 3 to 5 layers in each mold. Work carefully to keep the layers distinct.
  5. Swirl the layers: Using a skewer, make gentle up-and-down motions to create a swirled pattern across the layers in each mold.
  6. Freeze the popsicles: Insert popsicle sticks into the molds and freeze the popsicles until they are solid, which takes approximately 2 1/2 to 3 hours.

Notes

  • For even sweeter popsicles, use riper fruits as they contain more natural sugars.
  • If you don’t have a food processor, use a blender instead.
  • Popsicle molds can vary, so be flexible with your layer sizes to fill them evenly.
  • To easily release popsicles from the mold, run them under lukewarm water for a few seconds.
