Scale
For the Fish
- 2 pounds rock cod fish
- 1 teaspoon Olive oil
For the Ginger Soy Sauce Marinade
- 1/3 cup honey
- 1/2 cup soy sauce
- 1/2 cup rice vinegar
- 1 garlic clove, minced
- 1/2 inch piece fresh ginger, grated
- 1/2 cup chopped parsley, for garnish
Instructions
- Make the marinade: Combine honey, soy sauce, rice vinegar, minced garlic, grated ginger, and chopped parsley in a blender or food processor. Blend until smooth and well combined.
- Prepare the fish: Season the rock cod fillets generously with salt and pepper on both sides. Place the fish in a shallow dish or zip-top bag, pour most of the marinade over the fish (reserve a couple of tablespoons for later), and marinate for 30 minutes to 1 hour in the refrigerator.
- Cook the fish: Heat olive oil in a large skillet over medium heat. Remove the fish from the marinade (letting excess drip off) and sauté for about 3 minutes per side, until golden brown and cooked through.
- Finish and serve: Drizzle the remaining marinade over the cooked fish, garnish with chopped parsley if desired, and serve immediately.
Notes
- For extra flavor, marinate the fish longer, up to 1 hour.
- Ensure the skillet is hot enough to get a good sear on the fish.
- Use fresh ginger and garlic for the best flavor.
- Serve with steamed rice or vegetables for a complete meal.
