For the Fish

  • 2 pounds rock cod fish
  • 1 teaspoon Olive oil

For the Ginger Soy Sauce Marinade

  • 1/3 cup honey
  • 1/2 cup soy sauce
  • 1/2 cup rice vinegar
  • 1 garlic clove, minced
  • 1/2 inch piece fresh ginger, grated
  • 1/2 cup chopped parsley, for garnish

Instructions

  1. Make the marinade: Combine honey, soy sauce, rice vinegar, minced garlic, grated ginger, and chopped parsley in a blender or food processor. Blend until smooth and well combined.
  2. Prepare the fish: Season the rock cod fillets generously with salt and pepper on both sides. Place the fish in a shallow dish or zip-top bag, pour most of the marinade over the fish (reserve a couple of tablespoons for later), and marinate for 30 minutes to 1 hour in the refrigerator.
  3. Cook the fish: Heat olive oil in a large skillet over medium heat. Remove the fish from the marinade (letting excess drip off) and sauté for about 3 minutes per side, until golden brown and cooked through.
  4. Finish and serve: Drizzle the remaining marinade over the cooked fish, garnish with chopped parsley if desired, and serve immediately.
