Ingredients

Units Scale

Dry Ingredients

  • 220g / 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp baking soda
  • 1 tsp salt

Wet Ingredients

  • 875ml / 3 1/2 cups buttermilk or kefir
  • 2 eggs
  • 3 tbsp vegetable oil

Instructions

  1. Prepare the Batter in a Blender: Add all ingredients in the order listed to the blender and blend until smooth, ensuring a consistent and lump-free mixture.
  2. Prepare the Batter in a Bowl: In a large mixing bowl, whisk together eggs, flour, 250ml (1 cup) of buttermilk, baking soda, oil, sugar, and salt. Gradually add remaining buttermilk to avoid lumps, mixing until the batter is smooth and resembles heavy cream. Let it stand for 20 minutes until small bubbles appear on the surface.
  3. Preheat the Pan: Heat a non-stick frying pan over medium heat and lightly grease with odorless oil using a paper towel for even coating.
  4. Cook the Blini: Pour 125ml (½ cup) of batter into the pan, tilting the pan to spread it thinly and evenly. Cook until the top appears dry, then flip with a spatula and cook for an additional minute until golden. Remove to a platter and keep warm. Repeat with remaining batter, stacking the blini as they are cooked.

Notes

  • Ensure the batter consistency is similar to heavy cream for best results.
  • Letting the batter rest helps develop the texture and bubbles.
  • Use a lightly oiled paper towel to grease the pan for a non-stick surface without excess oil.
  • Traditionally served with butter, sour cream, caviar, or sweet toppings like jam and honey.
