Ingredients for Sausage Stuffed French Toast Roll Ups:
- 8 breakfast sausage links (maple, brown sugar, or plain, fully cooked)
- 8 slices sandwich bread (white, wheat, etc.), crust cut off
- 2 large eggs
- 3 tbsp milk
- 1/2 tsp ground cinnamon
- 1/4 teaspoon vanilla extract
- 1 tbsp unsalted butter

- Maple syrup
- Powdered sugar
Instructions
- Set Up: Place a large skillet over medium heat.
- Prepare Egg Mixture: In a small dish, whisk together eggs, milk, cinnamon, and vanilla.
- Rolling Up: Dip each piece of bread in the egg mixture, then place a sausage on the front edge of the bread. Roll up tightly, pressing to seal the end.
- Cooking: Melt butter in the skillet. Add the rolls seam side down. Cook for 2 minutes on each side until golden brown. Turn and cook for another 2 minutes on the other sides.
- Serve: Remove from heat and serve with syrup and/or powdered sugar, if desired.
Use a rolling pin to flatten the slices of sandwich bread.

- To store leftovers, cool completely and store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a single layer on a baking sheet, then transfer to a freezer-safe container—good for up to 2 months.
- To reheat, microwave in 20-second intervals until warmed through or bake in a 350°F (175°C) oven for 10–12 minutes until heated evenly. For frozen roll-ups, thaw in the fridge overnight or adjust reheating time accordingly.
