Description

These Simple Breakfast Quesadillas are a quick and delicious way to start your day. Packed with protein and flavor, they are sure to become a favorite in your breakfast rotation.


Ingredients

Eggs:

  • 2 eggs
  • Hot sauce, like Cholula
  • Pinch of salt

Filling:

  • 1/3 cup cooked pinto beans or black beans, rinsed and drained
  • 2 teaspoons butter or extra-virgin olive oil
  • 1 tablespoon chopped green onion
  • 1 tablespoon finely chopped cilantro
  • 1 tablespoon chopped pickled jalapeño (optional)

Additional:

  • 1 medium (8″) whole grain tortilla
  • 1/2 cup (packed) grated sharp cheddar cheese
  • Salsa or additional hot sauce, for serving

Instructions

  1. To prepare the eggs: In a bowl, whisk the eggs with the hot sauce and salt until they are well blended. Add the beans and set aside.
  2. To cook the eggs: Melt the butter in a medium-sized skillet over medium heat. Cook the egg mixture, stirring often, until just set, about 1 to 3 minutes. Transfer to a bowl and stir in the green onion, cilantro, and jalapeño.
  3. To cook the quesadilla: Warm the tortilla in a skillet over medium heat. Sprinkle cheese on half of the tortilla. Top with scrambled eggs and remaining cheese. Fold the tortilla in half and cook until golden and crispy on both sides, about 1 to 2 minutes per side.
  4. Serve: Remove from heat, let cool slightly, then slice and serve with salsa or hot sauce.

Notes

  • Make it dairy free: Use olive oil instead of butter and omit the cheese.
