Homemade Fajita Seasoning
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 1/2 teaspoons salt (or more to taste)
- 1 1/2 teaspoons oregano
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
Instructions
- Prepare the Chicken: Season the sliced chicken breasts evenly with salt and pepper to enhance flavor before cooking.
- Slow Cooker Method: Add the seasoned chicken, sliced bell peppers, onions, diced tomatoes or salsa, and fajita seasoning into the slow cooker. Stir everything together thoroughly to combine all ingredients well. Set the slow cooker to HIGH heat for 2–3 hours or LOW heat for 4–6 hours, allowing the flavors to meld and the chicken to cook through until tender.
- Instant Pot Method – Sauté: Turn the Instant Pot to the sauté setting and heat the oil. Add the sliced onions and bell peppers, cooking for 3–5 minutes or until they become soft and slightly translucent.
- Instant Pot Method – Pressure Cook: Season the chicken with salt and pepper, then add it to the Instant Pot along with chicken broth, diced tomatoes, and fajita seasoning. Stir everything to combine. Secure the lid, close the valve and set the Instant Pot to high pressure for 8 minutes. Once cooking is complete, perform a quick release of the pressure to avoid overcooking.
- Final Serving Tip: Serve the chicken fajitas hot with warm tortillas, garnished with favorite toppings such as avocado, sour cream, cilantro, or shredded cheese if desired.

- Do not leave the fajitas on the WARM setting for an extended time as this will cause the chicken to overcook and become dry.
