Description

    • 6 medium Pork sausage links

Vegetables

    • 3 large Bell peppers (cut into strips)
    • 1 large Onion (sliced into half moons, the same width as the pepper strips)
    • 6 cloves Garlic (minced)

  • 1 tbsp Olive oil
  • 1 tbsp Italian seasoning
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 1/2 cups Marinara sauce

Instructions

  1. Brown the Sausages: Heat oil in a large skillet over medium-high heat. Once it’s hot, add the sausage links. Cook for about 2 minutes per side, just until browned on the outside. (Note: They will not be fully cooked at this stage.)
  2. Prepare the Vegetables: While the sausages are browning, combine the bell peppers, onions, garlic, Italian seasoning, salt, and pepper in a slow cooker. Toss everything together to coat evenly. Pour the marinara sauce evenly over the vegetables.
  3. Add Sausages to Slow Cooker: Once the sausage links are browned, place them on top of the vegetables in the slow cooker.
  4. Cook the Dish: Cover the slow cooker and cook the dish on Low for 4-5 hours or on High for 2-3 hours, until the sausages are fully cooked through and the vegetables are tender.

  • You can substitute pork sausage with chicken or turkey sausage for a leaner option.
  • If you prefer crunchier vegetables, reduce the cooking time slightly.
