For the Steaks

  • 4 round steaks (about 1 pound)

  • 1 cup diced onion (about 1/2 medium onion)
  • 3 teaspoons minced garlic (about 3 cloves)
  • 2 tablespoons plus 2 teaspoons all-purpose flour
  • 2 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon soy sauce

Instructions

  1. Prepare the Steaks
    Rub the round steaks with salt and pepper to season generously. Set them aside while you prepare the pan for cooking.
  2. Sear the Steaks
    Heat 2 tablespoons of unsalted butter and the olive oil in a large skillet over medium-high heat. Once the pan is hot, carefully place the steaks in the skillet. Let them cook undisturbed for 3–5 minutes on each side to develop a nice golden-brown crust. Once done, remove the steaks and set them aside.
  3. Cook the Onions
    Add the diced onion to the same skillet (without cleaning it). Cook the onions until tender, stirring occasionally and scraping up any flavorful bits stuck to the pan. This adds depth to the gravy.
  4. Add Garlic and Flour
    Stir in the minced garlic and cook for about 1 minute, letting the flavor bloom. Then, whisk in the flour to form a paste, known as a roux, which will thicken the gravy.
  5. Make the Gravy
    Gradually pour in the beef broth, whisking constantly to ensure a smooth mixture without lumps. Once all the broth has been incorporated, add Worcestershire sauce and soy sauce. Stir well to combine.
  6. Combine and Cook
    Return the steaks to the skillet, submerging them in the gravy. Let the steaks cook in the gravy for another 3–4 minutes, ensuring they are well coated in the rich sauce. Taste and adjust with additional salt and pepper if needed.
