Frittata Ingredients
- 1 lb. Jennie-O Turkey Sausage
- 1 tsp. olive oil
- 1 red bell pepper, diced
- 1/4 small red onion, diced
- 1 jalapeño, seeded and chopped
- 1 tsp. chili powder
- 1 tsp. cumin
- Salt and pepper, to taste
- 16 oz. liquid egg whites
- 1/2 cup shredded cheddar cheese (56 g)

Instructions
- Preheat the oven: Preheat your oven to 375°F. Heat a 10-inch oven-safe skillet or cast-iron pan with olive oil.
- Cook the turkey sausage: Add the turkey sausage to your preheated skillet, breaking it into small chunks. Cook, stirring often, until the meat is fully cooked and no longer pink.
- Add vegetables and spices: Once the meat is cooked, add the diced red bell pepper, onion, and jalapeño to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add chili powder, cumin, salt, and pepper, then stir to combine. Remove the skillet from the heat.
- Add egg whites and cheese: After removing the skillet from the heat, pour the egg whites over the sausage and vegetable mixture evenly. Sprinkle the shredded cheddar cheese over the top.
- Bake the frittata: Transfer the skillet to the preheated oven. Bake for 25 minutes, or until the egg whites are set and the cheese is melted and bubbly.
- Let cool and serve: Remove the skillet from the oven and let the frittata cool slightly. Cut it into 8 equal slices and serve with your choice of hot sauce, fresh cilantro, salsa, or a dollop of Greek yogurt in place of sour cream.
