For the Mushroom Filling:
- 2 tablespoons Olive Oil
- 1 teaspoon Butter
- 2 Garlic Cloves, minced
- 10-12 Button Mushrooms, approx 200 grams, thickly sliced
- 1/2 teaspoon Italian Seasoning Blend
For the Stuffed Chicken:
- 3 Chicken Breasts, skinless and boneless
- 2 cups Spinach Leaves, roughly chopped
- 3/4 cup Mozzarella, grated
- Salt and Pepper to taste
Instructions
- Sauté the Mushroom Filling: Heat 1 tablespoon of oil in a cast iron pan. Add mushrooms and garlic, season with Italian seasoning blend and salt. Cook on high heat for 2-3 minutes until golden brown. Set aside.
- Prepare the Chicken: Butterfly the chicken breasts and season with salt and pepper. Stuff each breast with mushrooms, spinach, and cheese. Secure with toothpicks.
- Cook the Stuffed Chicken: Heat remaining oil and butter in the pan. Cook the chicken breasts on medium heat for 6-7 minutes per side. Rest for 2-3 minutes before serving.

- Ensure chicken reaches an internal temperature of 165F/73C for doneness.
