Cream Cheese Filling:
- One 8-ounce package cream cheese, room temperature
- 1/2 cup (100 g) granulated sugar
- 1 teaspoon lemon juice
- 1 pound fresh strawberries, washed, hulled, diced

Instructions
- Prepare Cream Cheese Filling: In a medium mixing bowl, combine cream cheese, sugar, and lemon juice. Beat with a hand mixer until smooth. Fold in diced strawberries.
- Assemble Egg Rolls: Place egg roll wrappers on a clean surface. Spoon 2-3 tablespoons of the cream cheese mixture onto each wrapper. Moisten edges with water. Fold bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the edges.
- Air Fry: Preheat air fryer to 400°F. Lightly coat egg rolls with cooking oil. Air fry for 4-5 minutes, flipping halfway through, until golden brown.
- Serve: Remove egg rolls from air fryer and dust with confectioners’ sugar before serving.
Notes
- These egg rolls are best enjoyed warm.
