Description

This refreshing Strawberry Cottage Cheese Ice Cream is a delightful, creamy dessert made with simple ingredients and prepared using the Ninja Creami. Combining the natural creaminess of cottage cheese with the sweetness of fresh strawberries and honey, this recipe offers a healthier alternative to traditional ice cream that’s both satisfying and easy to make.

Ingredients

Units Scale

Main Ingredients

  • 2 cups cottage cheese
  • 1 cup chopped strawberries
  • 3 tablespoons honey
  • 1 teaspoon vanilla bean paste or extract

Instructions

  1. Blend Ingredients: Combine the cottage cheese, chopped strawberries, honey, and vanilla bean paste in the Ninja Creami pint container. Use an immersion blender to puree the mixture until smooth. If an immersion blender isn’t available, a standard blender can be used to achieve a smooth consistency.
  2. Freeze Mixture: Cover the pint container securely and place it in the freezer. Allow the mixture to freeze solid for 24 hours to prepare it for the creaming process.
  3. Process in Ninja Creami: Once fully frozen, insert the pint into the Ninja Creami machine. Select and run the “Lite Ice Cream” cycle to start transforming the frozen mixture into creamy ice cream.
  4. Re-Spin for Creaminess: After the initial cycle, the ice cream might be powdery or less creamy. Remove the pint and run the Re-Spin cycle in the Ninja Creami to improve texture. Optionally, add up to one tablespoon of liquid if using fat-free cottage cheese to assist the process; otherwise, just re-spinner is sufficient.
  5. Add Mix-Ins and Serve: If desired, stir in any preferred mix-ins. Serve the strawberry cottage cheese ice cream immediately and enjoy a healthy, fruity frozen treat.

Notes

  • For best texture, use 1% or 2% fat cottage cheese to avoid the need for added liquid during the Re-Spin cycle.
  • Vanilla bean paste enhances flavor more intensely than extract but either works well.
  • The ice cream is best served fresh but can be stored in the freezer for up to a week.
  • Feel free to add mix-ins such as chopped nuts or chocolate chips during the final stirring.
  • If you don’t have the Ninja Creami, similar results might be obtainable using an ice cream maker, though texture may vary.
