For the Galette

    • 2 premade pie crusts
    • 4 cups small fresh whole strawberries
    • 1/3 cup sugar, plus a pinch for sprinkling

For the Egg Wash

  • 1 egg
  • 1/2 teaspoon water

Instructions

  1. Preheat oven: Preheat your oven to 350°F.
  2. Prepare the pie crusts: Allow the pie crusts to sit at room temperature, or thaw according to the directions on the box if they are frozen.
  3. Mix the strawberries: Add the sugar to the strawberries in a bowl and stir gently until the strawberries are evenly coated.
  4. Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking.
  5. Assemble the galette: Open the pie crusts and place half of the strawberry mixture in the center of each crust. Begin folding the crust over the strawberries, leaving a visible “hole” in the middle. Fold one side of the crust toward the middle, then proceed with the next, using a little water as needed to seal any seams. This step is easiest when done directly on the baking sheet to avoid transferring and spilling.
  6. Apply the egg wash: Beat the egg with water and brush the mixture evenly over the crusts. Sprinkle a bit of sugar on top for added sweetness and texture.
  7. Bake the galette: Place the baking sheet in the oven and bake for 20-22 minutes, or until the crust is golden brown and fully cooked.
  8. Cool the galette: Allow the galette to cool. If there is excess juice from the strawberries, transfer the galette to a wire rack with a baking sheet underneath to catch any drips. This helps prevent the crust from becoming soggy.

Notes

  • If you don’t have small strawberries, cut larger ones in half to measure 4 cups.
