Description

Ingredients

Orange Chicken Sauce:

  • 18 ounce jar orange marmalade (Smucker’s brand)
  • 3/4 cup Sweet Baby Ray’s Original barbecue sauce

Chicken:

  • 2 pounds (approximately 3 large) boneless skinless chicken breast, cut into 1 1/2 inch pieces and patted dry with a paper towel
  • 3 tablespoons olive oil (to pan sear the chicken)

Instructions

  1. Prepare the Orange Chicken Sauce: In a small bowl, whisk together the orange marmalade and Sweet Baby Ray’s barbecue sauce until well combined. Set aside.
  2. Sear the Chicken: Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil. Cook half of the chicken pieces until golden brown and cooked through, about 7-9 minutes. Transfer to a plate. Add 1 tablespoon of olive oil and cook the remaining chicken pieces.
  3. Combine and Cook: Return all chicken to the skillet. Pour in the orange sauce mixture. Cook on medium heat for 15 minutes, stirring often, until the sauce thickens and coats the chicken.
  4. Serve: Once the sauce has thickened, remove from heat and serve.
