Orange Chicken Sauce:
- 18 ounce jar orange marmalade (Smucker’s brand)
- 3/4 cup Sweet Baby Ray’s Original barbecue sauce
Chicken:
- 2 pounds (approximately 3 large) boneless skinless chicken breast, cut into 1 1/2 inch pieces and patted dry with a paper towel
- 3 tablespoons olive oil (to pan sear the chicken)
Instructions
- Prepare the Orange Chicken Sauce: In a small bowl, whisk together the orange marmalade and Sweet Baby Ray’s barbecue sauce until well combined. Set aside.
- Sear the Chicken: Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil. Cook half of the chicken pieces until golden brown and cooked through, about 7-9 minutes. Transfer to a plate. Add 1 tablespoon of olive oil and cook the remaining chicken pieces.
- Combine and Cook: Return all chicken to the skillet. Pour in the orange sauce mixture. Cook on medium heat for 15 minutes, stirring often, until the sauce thickens and coats the chicken.
- Serve: Once the sauce has thickened, remove from heat and serve.
