For the Filling
- 3 diced avocados
- 1/4 cup diced red onion
- 1 diced Roma tomato
- 3 tablespoons chopped fresh cilantro leaves
- 1 teaspoon garlic powder
- Juice of 1 lime
- Salt and pepper to taste
For Assembling and Cooking
- 8 egg roll wrappers
- Water (for sealing edges)
- 1 cup vegetable oil, for frying
Instructions
- Heat the Oil
In a large skillet, heat 1 cup of vegetable oil over medium-high heat. This will be used for frying the egg rolls to golden-brown perfection. - Prepare the Filling
In a medium-sized bowl, mash the 3 diced avocados to your desired consistency. Mix in the ¼ cup diced red onion, 1 diced Roma tomato, 3 tablespoons of chopped fresh cilantro, 1 teaspoon garlic powder, the juice of 1 lime, and salt and pepper to taste. This creates a flavorful and creamy filling for the egg rolls. - Assemble the Egg Rolls
Lay one of the 8 egg roll wrappers on a clean surface with one corner pointed toward you (diamond shape). Spoon some of the prepared avocado mixture into the center of the wrapper. Using your fingertip or a small brush, moisten the edges of the wrapper with water. Fold the bottom corner up tightly over the filling, fold in the sides, and then roll the wrapper upwards to form a sealed roll. Repeat this process for all wrappers. - Fry the Egg Rolls
Once the wrappers are assembled, carefully place the egg rolls into the hot oil. Fry each roll for 2-3 minutes, turning occasionally, until golden brown on all sides. Use metal tongs to remove the rolls from the oil and place them onto a paper towel-lined plate to remove excess oil. - Serve
Serve the avocado egg rolls immediately with your favorite dipping sauce, such as sweet chili sauce or a tangy ranch dressing. Enjoy while they’re hot and crispy!
Notes
- For healthier frying, use an air fryer instead of deep frying. Preheat the air fryer to 375°F (190°C) and cook for about 5-7 minutes, flipping halfway through.
- To prevent the avocado mixture from browning, mix in a little extra lime juice.
- You can experiment with dipping sauces such as chipotle mayo, salsa, or even a balsamic glaze to elevate the flavor.
- Ensure the oil is hot enough (around 350°F or 175°C) to prevent the egg rolls from absorbing too much oil during frying.
