Apple Filling
- 8 Granny Smith apples, about 9 cups sliced
- 2 tbsp butter
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp salt
- juice of 1/2 lemon
Butter Pie Crust
- 2 1/2 cups flour
- 1 tsp salt
- 1 cup cold butter, diced
- 1/2 cup ice water
Toffee Sauce
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/4 cup heavy cream
Assemble the Toffee Apple Pie
- 4 tbsp cornstarch
- 1 egg
- 1 tbsp water
Vanilla Custard Sauce
- 2 cups milk
- 3 egg yolks
- 1/3 cup sugar
- 1 tbsp cornstarch
- pinch salt
- 2 tsp vanilla extract
- 1 tbsp butter
Instructions
- Apple Filling – Peel and slice the apples. Heat butter in a pot, add apples, sugar, spices, salt, and lemon juice. Cook until softened. Spread in a dish to cool.
- Butter Pie Crust – Make dough in a food processor. Chill for 1 hour.
- Toffee Sauce – Melt butter, add sugar, cream, boil, cool.
- Assemble the Toffee Apple Pie – Preheat oven, roll out dough, add apple mixture and toffee sauce, top with lattice crust, brush with egg wash, bake.
- Vanilla Custard Sauce – Combine ingredients, cook custard, strain, cool. Serve over pie slices.
Notes
- For best results, use cold ingredients when making the pie crust.
- Adjust the sweetness of the toffee sauce to suit your preference.
