BBQ Chicken Mixture:

  • 1.5 cups chopped cooked chicken
  • 1 15oz. can black beans, drained
  • 1/4 red onion
  • 1 jalapeño
  • 1/2 cup fresh cilantro
  • 2 cups shredded cheddar
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/2 cup BBQ Sauce

Additional:

  • 10 7-inch flour tortillas

Instructions

  1. Prepare BBQ Chicken Mixture: Combine chicken, black beans, red onion, jalapeño, cilantro, cheddar, chili powder, smoked paprika, salt, and BBQ sauce in a bowl.
  2. Fill and Cook Quesadillas: Spread 1/3 cup of mixture on half of each tortilla. Fold tortillas closed and cook in a skillet until crispy and cheese melts. Cut in half and serve.
