  • ⅛ tsp coarse or flaked sea salt, plus more for topping
  • ½ cup vegan salted caramel sauce, plus more for topping

Instructions

  1. Make the pastry dough: In a large bowl, whisk together the flour, salt, and sugar. Add in the cold cubed vegan butter. Using a pastry blender or two forks, cut the butter into the dry ingredients until the mixture resembles coarse oatmeal. Gradually add the ice cold water while mixing with a fork until the dough begins to come together. Knead gently with your hands to form a ball, then shape into a thick disk. Wrap tightly with plastic wrap and refrigerate for at least 1 hour, or up to 1 week.
  2. Prepare the filling: In a bowl, toss the apple slices with lemon juice to prevent browning. Add the all purpose flour, ground cinnamon, ground nutmeg, ground ginger, sea salt, and vegan salted caramel sauce. Mix well until the slices are evenly coated with the spiced caramel mixture.
  3. Assemble the galette: Preheat your oven to 375°F (190°C). Place a large piece of parchment paper on a flat surface and roll the chilled dough on top into a roughly 10-inch circle about ½ cm thick, ensuring even thickness. Arrange the apple mixture in the center of the dough, leaving a border around the edges. Carefully fold the edges of the dough over the apples, pleating as needed to form a rustic crust.
  4. Prepare for baking: Brush the crust edges with the non dairy milk for a golden finish. Sprinkle raw sugar over the crust for added texture and sweetness, if desired. Carefully transfer the parchment paper with the galette onto a baking sheet, trimming excess parchment if needed.
