Spinach Tortillas:
- 6 spinach tortillas
Vegan Cream Cheese Mix:
- 8 ounces vegan cream cheese
- 1 bunch fresh herbs (chives, dill, basil, rosemary)
- 1/4 teaspoon sea salt
Vegetable Fillings:
- 3 carrots
- 3 stalks celery
- 1 whole red bell pepper
- 1 whole yellow bell pepper
- 1/2 head red cabbage
- 1 whole cucumber
Instructions
- Prepare Vegetables: Wash, towel dry, peel, and slice veggies into thin strips.
- Mix Cream Cheese: Mince herbs, mix with cream cheese, and add salt.
