Description

Colorful and delicious vegan veggie rainbow wraps that are as pleasing to the eye as they are to the palate. These wraps are bursting with fresh vegetables, creamy herb-infused vegan cream cheese, and wrapped in spinach tortillas for a healthy and vibrant meal.


Ingredients

Spinach Tortillas:

  • 6 spinach tortillas

Vegan Cream Cheese Mix:

  • 8 ounces vegan cream cheese
  • 1 bunch fresh herbs (chives, dill, basil, rosemary)
  • 1/4 teaspoon sea salt

Vegetable Fillings:

  • 3 carrots
  • 3 stalks celery
  • 1 whole red bell pepper
  • 1 whole yellow bell pepper
  • 1/2 head red cabbage
  • 1 whole cucumber

Instructions

  1. Prepare Vegetables: Wash, towel dry, peel, and slice veggies into thin strips.
  2. Mix Cream Cheese: Mince herbs, mix with cream cheese, and add salt.
  3. Assemble Wraps: Spread cream cheese on tortilla, place veggie strips, roll tightly, seal with cream cheese, and cut into pieces.
  4. Repeat: Make wraps with remaining tortillas.
