  • 2-3 tablespoons red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

  • Tortillas
  • White onion, finely chopped
  • Fresh cilantro, chopped
  • Salsa macha, or your favorite salsa

Instructions

  1. Preheat the oven: Preheat your oven to 325°F. Season the chuck roast with salt, pepper, and taco seasoning. Bake for 1 hour per pound of meat.
  2. Shred the roast: Remove the roast from the oven, shred it using forks, and return to the oven if needed.
  3. Crisp the meat: Increase oven heat to 425°F. Toss the shredded roast in the fat and bake uncovered until crispy.
  4. Make guacamole: Mash avocados, mix with lime juice, orange juice, salt, pepper, red onion, and cilantro.
