For the mocktail:
- 2 cups fresh watermelon cubes
- 12 mint leaves plus more for garnish
- 1/4 cup fresh lime juice
- 1/4 cup honey simple syrup
- Lime sparkling water
Instructions
- Prepare the simple syrup: Combine equal parts maple syrup and water in a small saucepan. Simmer for 5 minutes until slightly thickened. Let cool and store in the fridge.
