Description
This refreshing Watermelon Mojito is a perfect summer drink to cool off with. Made with fresh watermelon juice, lime, mint, and a splash of rum or sparkling water, it’s a delightful and easy-to-make cocktail or mocktail.

Watermelon Juice:
- 8 large seedless watermelon cubes or 3/4 lb. - 1 lb. (about 1 - 1 1/2 cups juice)
Mojito Mix:
- 2 ounces lime juice or juice of 1 lime (~1/4 cup)
- 1 teaspoon honey or agave nectar
- 15-20 mint leaves (~ 1/3 cup)
- 3-4 1/2 ounce white rum* (substitute sparkling water or kombucha for a mocktail version)

Instructions
- Prepare Watermelon Juice: In a blender, add the watermelon cubes and blend until smooth.
- Strain (Optional Step): If the juice is pulpy, strain it through a mesh strainer into a jar or glass.
- Mix Mojito: To the juice, add lime juice and sweetener, stirring to combine.
- Muddle Mint: Divide mint leaves among glasses, muddle the leaves with a wooden spoon until wilted.
- Assemble: Fill glasses with ice, pour in the watermelon lime juice, add rum or sparkling water, and top with more sparkling water.

Notes
- Make the watermelon juice up to 48 hours ahead but stir before using.
- To make a mocktail, use sparkling water or kombucha instead of rum.
